Continuing my journey to wow my wife with Hungarian-inspired dishes, Day 2 takes a fun and creative turn. After the richness of Chicken Paprikash on Day 1, I decided to create a handheld delight that brings the same comforting flavours into a sandwich. Enter the Hungarian Chicken Paprika Sandwich—a simple, satisfying, and flavour-packed meal that’s sure to make her smile.

Why a Sandwich?

Hungarian cuisine is known for its hearty stews and robust flavours, but sometimes, transforming those elements into something unexpected—like a sandwich—can be a delightful twist. This dish is perfect for a lighter meal, packed with the smoky-sweet essence of paprika and tender chicken, all nestled in toasted bread. It’s comfort food with a romantic, Hungarian touch.

Ingredients (Serves 1)

For the Filling:

  • 100g cooked chicken, shredded
  • 1/2 medium onion, finely chopped
  • 1/2 tbsp Hungarian sweet paprika
  • 40 ml chicken stock
  • 25 ml sour cream
  • 1/2 tbsp plain flour
  • 1/2 tbsp olive oil
  • Salt and black pepper to taste

For the Sandwich:

  • 1 crusty roll, baguette slice, or ciabatta
  • 1 tbsp butter (softened, for spreading)
  • 2 cucumber slices (optional, for crunch)
  • 1 tbsp grated cheese (optional, for topping)

Step-by-Step Instructions

1. Prepare the Filling:

  • Heat 1/2 tbsp olive oil in a frying pan over medium heat.
  • Add 1/2 medium onion and sauté until soft, about 5 minutes.
  • Stir in 1/2 tbsp Hungarian sweet paprika and cook for 30 seconds to release its aroma.
  • Add 100g shredded chicken and coat it in the paprika mixture.
  • Pour in 40 ml chicken stock and simmer for 5 minutes to meld the flavours.
  • In a small bowl, mix 1/2 tbsp flour with 1/2 tbsp sour cream until smooth. Stir this mixture into the pan and cook until the sauce thickens.
  • Season with salt and black pepper to taste, then remove from heat.

2. Toast the Bread:

  • Slice your roll or baguette in half. Spread the cut sides with 1 tbsp softened butter.
  • Toast the bread in a hot pan or under a grill until golden and crisp.

3. Assemble the Sandwich:

  • Spoon the warm chicken paprika mixture onto the bottom half of the bread.
  • Add 2 cucumber slices for crunch or sprinkle with 1 tbsp grated cheese for extra indulgence.
  • Close the sandwich with the top half of the bread.

4. Serve:

  • Cut the sandwich in half and enjoy it while warm. Pair it with a small side salad of cucumber, peas, and sweetcorn if desired.

Why This Sandwich

  • Personal Touch: It’s a thoughtful, single-serving meal that’s perfect for her.
  • Comfort Meets Creativity: All the flavours of Hungary, but in a fun sandwich format.
