What is Rakott Karfiol?
Rakott Karfiol is a traditional Hungarian layered casserole featuring cauliflower, minced meat, rice, and sour cream. It’s a versatile dish that can be customized with different meats or made vegetarian, offering a comforting and satisfying meal.
Ingredients (Serves 4)
• 2 small heads of cauliflower (or 1 large), cut into small florets
• 500g minced meat (beef, pork, turkey, or chicken)
• 1 white onion, finely chopped
• 1 clove garlic, minced
• 2 teaspoons sweet paprika powder
• 125g uncooked white rice
• 300ml sour cream
• 3-4 tablespoons grated cheese
• Salt and pepper, to taste
• Oil, for sautéing
Step-by-Step Instructions
1. Prepare the Cauliflower:
• Cook the cauliflower florets in salted water until just tender. Drain and set aside.
2. Cook the Rice:
• Cook the rice until it’s nearly done, leaving it slightly al dente. Set aside.
3. Prepare the Meat Mixture:
• In a pan, heat a little oil and sauté the finely chopped onion until translucent.
• Add the minced garlic and cook briefly until fragrant.
• Add the minced meat and cook until it’s browned and sealed.
• Stir in the paprika powder, then add a splash of water to prevent burning. Season with salt and pepper.
• Cook until the meat is fully cooked and the mixture is well combined.
• Combine the cooked meat with the nearly cooked rice.
4. Assemble the Layers:
• Preheat the oven to 180°C (350°F).
• Spread a little sour cream on the bottom of a baking dish.
• Place a layer of cauliflower florets over the sour cream.
• Add a layer of the meat and rice mixture over the cauliflower.
• Top with another layer of cauliflower.
• Spread the remaining sour cream evenly over the top layer.
• Sprinkle grated cheese on top.
5. Bake:
• Place the assembled dish in the preheated oven and bake for 30-40 minutes, or until the top is golden and the cheese is melted.
6. Serve:
• Let the casserole rest for a few minutes before serving.
• Serve with salads, pickles, gherkins, and extra sour cream on the side.
